Chunky Monkey Smoothie Bowl

I don’t know about you, but I’ve totally hopped aboard the smoothie bowl bandwagon, and I don’t plan on jumping off anytime soon!

I’ve always loved a good smoothie, but never really felt as though I could treat it as a meal… perhaps because I was sipping it out of a straw. When the smoothie bowl came along, it totally rocked my world. Once the smoothie was presented in a bowl, and topped with all kinds of fun stuff that I could eat with a spoon, it officially became one of my favorite things to eat this summer, for breakfast or lunch.

While we alternate flavors and toppings around here, this “Chunky Monkey” version has quickly become a favorite.

The combination of chocolate, peanut butter, and bananas is totally my love language, and it’s surprisingly filling thanks to ingredients like protein powder and rolled oats. Top it with sliced bananas, shredded coconut, cacao nibs, granola… or anything really. Anyway you shake it, it’s totally delicious.

Ingredients
  1. 3/4 cup of unsweetened vanilla almond milk
  2. 1 frozen banana
  3. 1 scoop of chocolate protein powder
  4. 1/4 cup of rolled oats
  5. 1 TBS peanut butter (or 2 TBS PB2)
  6. 1 tsp honey
For topping (Optional)
  1. Sliced banana
  2. Shredded coconut
  3. Cacao Nibs
  4. Granola
Instructions
  1. Add all ingredients together (besides toppings), and blend until smooth. Pour into a bowl and top with desired toppings. Enjoy!

    I keep meaning to try smoothie bowls and always forget! I love that they’re so customizable (like, I hate coconut so I’d totally leave it off here) – this may be a staple of mine come maternity leave since it’ll be easy to put together with a newborn!
