Pumpkin Spice Overnight Oats

You know that amazing feeling you get when you wake up to a pot of freshly brewed coffee because you actually remembered to program your coffee maker the night before?  Well, waking up to a breakfast that is already prepared and ready to eat is equally as rewarding. Waking up to anything pumpkin flavored makes my fall-loving heart happy, which is why this Pumpkin Spice Overnight Oats recipe has been on heavy repeat around here lately.

I’m all about easy meals these days, which is probably why I love overnight oats so much. They’re super easy to prepare. It’s as simple as throwing a few ingredients into a mason jar, putting it in the refrigerator, and walking away.  The pumpkin spice flavor develops overnight, the oatmeal plumps up, and you get to wake up to a healthy and filling breakfast.


If cold oats aren’t your jam, you could certainly warm yours up, but I generally just grab a spoon, crack open the jar, and dig in.

Ingredients
  1. 1/2 cup unsweetened vanilla almond milk
  2. 1/4 cup pureed pumpkin
  3. 1/3 cup rolled oats
  4. 1 Tbs maple syrup
  5. 1/2 tsp pumpkin pie spice
Instructions
  1. Combine all ingredients in a mason jar. Stir to combine. Place lid on jar. Allow to chill in the refrigerator overnight (or for at least 6 hours).
Notes
  1. Recipe may be warmed in the microwave (without lid), or enjoyed cold.
