Creamy Pumpkin & Sausage Penne

‘Tis the season of the pumpkin. It seems like everywhere you look right now, pumpkin is king, and I’m not mad about it in the least bit.


I love a good pumpkin spice latte aside a slice of pumpkin bread, just as much as anyone, and while I mainly indulge in sweet pumpkin flavored delicacies, I feel like the gourd sometimes gets a bad rap when it comes to savory dishes… and it shouldn’t.



This sauce recipe combines my favorite fall flavor with the spiciness of italian sausage and the creamy goodness of parmesan cheese. It comes together quickly, which makes it a great weeknight dinner option.  If you’re looking to lighten things up, you can easily substitute turkey sausage, over pork, and milk, rather than half & half. Serve it over penne with a side of salad and bread, and you have the perfect autumn meal.

Ingredients
  1. 1 TBS olive oil
  2. 3 cloves garlic, minced
  3. 1 pound hot Italian sausage
  4. 1 can of pumpkin puree
  5. 1 cup half & half
  6. 1/2 cup chicken stock
  7. S&P to taste
  8. 1 tsp Italian seasoning
  9. 1 tsp chili powder
  10. 1/2 shredded parmesan cheese
Instructions
  1. In a large pot over medium heat, sauté garlic until translucent. Add sausage and cook until no longer pink, breaking up into crumbles with a spoon. Drain any fat. Add in pumpkin, half & half, chicken stock, and spices. Simmer over low heat for about 5 minutes. Add in cheese and stir to combine. Serve over al dente penne (or pasta of your choice).

    This dish looks incredible, Jessica! Ive always been a little hesitant with using pumpkin in dishes aside from desserts but this definitely will be a hit with my family. And I love how simple this is to make – I’m all for simplistic, tasty meals 🙂
