A Fun Lunch Box Idea for Back-to-School

It’s hard to believe that summer is almost over, and in just a few short weeks my kids will be heading back to school. I have loved having them home, and the freedom of not having a schedule to stick to for the last couple of months, but I also love the beginning of a new school year and the comfort of a regular routine. This year, with my two biggest kids being in school full-day and my third heading off to preschool a few days a week, I’ve already started thinking about how we can simplify things and ways to make our lives run a little more smoothly. Mornings can be pretty chaotic around here when I’m trying to get my kids out the door, so I really try to make the effort to pack my kid’s lunches and snacks the night before. Like most kids, when it comes to lunch, they love a good PB&J sandwich. Luckily for us, our schools do allow peanut butter, so awhile ago we started making these peanut butter and jam roll-ups and they were an instant hit. My kids even love to help me make them!

We love using Santa Cruz Organic Dark Roasted Peanut Butter to make them because it tastes great and it’s made with USDA certified organic peanuts. Plus it contains no added sugar, no hydrogenated oils, and no artificial ingredients. It’s just peanuts and salt. We pair it with their organic fruit spreads, because they taste homemade, and have a great spreadable texture.



Here’s how we make the PB&J roll-ups:

Ingredients


Your favorite soft, whole grain bread
Santa Cruz Organic Dark Roasted Creamy Peanut Butter
Santa Cruz Organic Seedless Red Raspberry Spread (or whatever flavor you like)

Instructions


1. Using a rolling pin, roll a slice of bread until it is flat and thin.
2. Remove crust (this is optional, it makes the roll-ups look neater, but I don’t always do this!)
3. Spread a layer of Santa Cruz Organic Dark Roasted Peanut Butter on the bread.
4. Spread a layer of Santa Cruz Organic Seedless Red Raspberry Spread on top of the peanut butter.
5. Roll it up from the short side and it’s ready to enjoy!

Sometimes we set up an assembly line and make a bunch of these at once so they’re ready to easily be tossed into lunch boxes. We always pair our roll-ups with fresh fruit, or with Santa Cruz Organic Applesauce, which is a great easy choice. Each 4-ounce cup contains 100% of the Reference Daily Intake of Vitamin C.
